Vegan Curry

INGREDIENTS:

2 cups chopped lutya (taro) 

2 cups chopped carrots (Tip: keep the skin on for added mood lifting vit b! Fighting depression!) 

2 cups water

2 cups fresh coconut milk

7 seeds cardamom 

1 tsp salt 

1 tsp coco sugar 

1 tsp lemon pepper 

Brilliant for barbecues and rubs too

3 tbsp Extra Virgin Olive Oil 

Sinamak - spiced aged vinegar

3 saba bananas 

2 cups chopped eggplant
