Recipe for:

Greens with Strawberry Vinaigrette


(Serves 8)

2 heads romaine lettuce
1 medium sized white onion, chopped into rings
2 tbsp. strawberry preserves
1/4 cup of virgin olive oil
1/4 cup of mild vinegar
2 cloves garlic, finely chopped
1 tsp. mustard
1/2 cup of fresh strawberries, halved

1. Start by tearing romaine lettuce to good bite sizes on a salad bowl.

2. In saucepan, place olive oil, garlic, mustard and strawberry preserves. 

3. Add freshly chopped onion rings. Turn off the heat and lightly saute everything in pan.

4. To that, add your mild vinegar and another fourth cup of virgin olive oil. Whisk with fork to help release remaining heat.

5. Pour your warm vinaigrette over salad and toss! For garnish, top with freshly chopped strawberries... ENJOY!
