Recipe for:

Huevos Rancheros

INGREDIENTS:

Pomace Olive Oil

1 Chopped white Onion

2 Cloves chopped garlic

1 Cup left over ground meat or chicken chunks

1 Bell Pepper Sliced in Strips

1/2 tsp Smoked Paprika

1/2 tsp Dried Oregano

Salt 

Pepper

1 Tbsp wine

1 Tbsp Ketchup

4 Eggs

2/3rd cup Petchay Leaves sliced into strips

HERE’S HOW TO MAKE THIS DISH:

 

In non stick pan drizzle olive oil. Add onion, garlic, left over meat and bell pepper. Let cook so that all flavours blend. Add paprika, oregano, salt and pepper to taste. In a separate bowl mix together wine and ketchup and pour over pan. Then add the eggs. Cover and let simmer until white is cooked but yolk is still slightly wet (about 12 minutes). When done slide onto pretty dish. Garnish petchay leaves over dish!
