Recipe for:

Fabada My Way


2 Cups White Beans Soaked overnight

1/4th cup Extra Virgin Basil Olive Oil

1 Whole Garlic with top cut off

1 Whole white onion peeled and chopped into 4 chunks

1 cup chopped chorizo

1 tsp Spanish Paprika

1 Tsp Italian Seasoning

2 Dashes basil

1/2 cup vinegar

4 cups water

1/4 cup tomato paste

1 cup red wine

1 tsp salt

1/2 tsp pepper

1 tsp coco sugar

1 whole unpeeled potato

1 unpeeled carrot

1/2 cabbage cut in chunks


Cook beans for 1 hour in thick pot, then in another pot start cooking Olive Oil, Garlic, Onion, Chorizo, Spanish Paprika, Italian Seasoning, Basil, Vinegar, Water, Tomato paste, Red wine, Salt, Pepper, Coco Sugar, Potato, Carrot and Cabbage. Transfer beans and let all cook together for another 25 minutes. Serve with a La Española Garlic or Lemon Olive Oil drizzle! Yum!
